Our supplier commented recently that "you need to be a little crazy to make syrup" and I think he's right! Making maple syrup or "sugaring" as it is known, is forever a learning experience and hard work. You really need to love being cold and in the woods.
Never had maple syrup? Well, first it is nothing like "pancake" syrup. Pancake syrup can have maple flavoring in it, but generally doesn't contain any actual maple syrup. The tastes are very different. For those new to it - I often get asked which grade of syrup is best. I generally recommend if you haven't tasted maple syrup or are not accustomed to the taste to start with the Golden as it is a more delicate (hence the grade) flavor that has more of a "sugary" tasting.
Maple syrup not just delicious, but it is also versatile! Add it to coffee (my personal favorite) or use it in baking. Like syrup, maple sugar (which retains its maple flavor) can also be used in baking or in place of other sweeteners in everyday cooking.

1. It takes around forty gallons of sap to produce one gallon of syrup. Assuming of course that the sugar content in the sap is 2%.
2. A maple tree can yield sap for 100 years.
3. Frosty nights and sunny days encourage sap flow.
4. When the trees bud in late March, early April, the sap turns bitter.
5. The Iroquois people invented maple syrup.
6. Compared to white sugar and high-fructose corn syrup, maple syrup is the healthier choice because it has higher levels of nutrients and antioxidants.
